8.00: Tourguide & Car pick up at hotel to take part in Hanoi City Tour, firstly visit Ho Chi Minh’s mausoleum, his house on stilt, the botanical garden and the Presidential palace while learning about his life and revolutionary activities. This used to be the residence of the Governor of Indochina. After 1954 it was named the Presidential Palace and became the place where Ho Chi Minh lived and worked until he passed away in1969.
On the way out visit One Pillar pagoda. The pagoda was constructed in 1049 by King Ly Thai Tong according to his dream of Bodhisattva seating on a lotus flower and led him to the pagoda. In 1954, the pagoda was destroyed by the French before their withdrawer. After taking over the city on October 10th 1954, Vietnam Ministry of Culture restored the pagoda. The pagoda of today remains since this restoration.

Around 10.30, arriving at the Temple of Literature. This is the combination of the Confucius Temple worshiping Confucius which was built in 1070 and the first Royal National university in Vietnam built 6 years later in 1076. Considered as “an escape” from the bustling city, this temple and its beautiful garden provide an opportunity to learn more about education in Vietnam since 1000 years ago until recent history.

15.30 visit Hoan Kiem lake (Restored Sword lake) and Ngoc Son temple. Situated in the heart of Hanoi, the lake got its name according to a legend story. In the 15th century during the Ming Chinese invasion, general Le Loi was presented with a holy sword. With the help of this sword he expelled the Chinese from Thang Long, present-day of Hanoi and proclaimed himself as king Le Thai To. One day, when the king was sailing on the lake, suddenly a golden turtle emerged from the water and claimed back the sword which has been believed given to him by God. Since then, the lake has been known as Ho Hoan Kiem or the lake of the Restored Sword.
On as island at the northern part of the lake stands Ngoc Son or Jade Mountain temple, one of the most beautiful and religious site in the capital. The temple was established by a mandarin named Nguyen Van Sieu and is dedicated to the spirits of the soil, medicine, literature, and also to Tran Hung Dao, the general who defeated the Mongols in the 13th century.

History and name
Hanoi used to be called Thang Long (flying dragon). The myth was that in 2010, the new king Ly Cong Uan while visiting this valley saw a dragon flying into the sky, and took this as an omen that this place was a suitable capital to rule. Thang Long had rich soil and good defense because it was surrounded by the Red River and backed by mountains.
The city was later renamed Hanoi (which means inside the river) in 1831 when the Nguyen dynasty moved capital to Hue. Hanoi was returned its status as capital during the French rule from 1887 to 1954, and continued to be the capital, first of Communist North Vietnam (from 1954) and later, of the Socialist Republic of Vietnam.
As of 2008, Hanoi will be expanded to include the surrounding province of Hatay and parts of Ha Dong, to a size of 3.200km2 and population of over 6 million people.

Watching Ochna integerrima blossom

I LOVE SAIGON

Ochna integerrima is a tree species (sometimes shrub) of the family Ochnaceae. The spectacular yellow flowers of this plant make it very popular in southern Vietnam, where the plant is purchased during Tết, the traditional Vietnamese New Year. Ochna integerrima is also the provincial flower of Mukdahan province, Thailand.
In Vietnamese, the variety of O. integerrima whose flowers have five petals is called mai vàng (yellow mai), whereas mai núi (mountain mai) flowers have between five and nine petals

Vietnamese Iced Coffee - Cafe da

In Vietnam, there are no drive-thrus nor take-out. Coffee is brewed and served either at home or in restaurants at leisure. Hot coffee (cafe nong) is preferred in the morning, while iced coffee (cafe sua da) is saved for the heat later in the day. I was talking to my Dad about coffee and he was reminiscing about cups from the past. This man loves his cup of joe.


He's completely happy here in the States, but has an incredibly fond memory of his life in Vietnam. "There was nothing like escaping from the rain--running into a coffee shop with a lightly damp raincoat. I can immensely enjoy a cup in that kind of atmosphere." Although we Vietnamese "owe" the availability of ingredients for this coffee to French colonization, this creation is Vietnamese. Vietnamese coffee is uniquely characterized by a combination of French roast coffee dripped through a Vietnamese coffee filter mixed with condensed milk.

French roast pairs exceptionally well with condensed milk. The Vietnamese coffee filter gives a stronger brew than that of an American drip machine and different than that of a French press. Any French roast can be used, but the most popular brands for Vietnamese coffee I've seen are Cafe Du Monde, Cafe'de Paris, and Trung Nguyen. For this recipe, we're going to stick with Cafe Du Monde.

Notice that Cafe Du Monde isn't pure coffee! This grind is laced with the ground root of the chicory herb. This mixture originated in Europe during WWII when money was tight and expensive foods like coffee needed to last. Chicory root was used to stretch the coffee supply. After the war, the preference for the chicory flavor became a trend and exists even today!
What you need:

- 1 heaping tablespoon (about 4 teaspoons) of Cafe Du Monde grind
- 1-2 teaspoons condensed milk to fit your taste
- a Vietnamese coffee filter
- a glass for the brew
- a glass filled with ice

Prep time: 1 minute
Cook time: 3-5 minutes
1. Start by boiling some water. An electric kettle makes it a lot faster. I'm lucky my tea-loving roommate left it behind when she went back to Australia. I would have never thought to purchase one, but it I'm glad I have it!

2. Remove the metal filter and pour in 1 heaping tablespoon of Cafe Du Monde (about 4 teaspoons). I love the smell of coffee!

3. Twist the filter on gently until it just starts to stop. Then turn it little more, a bit less than 1/8 a turn.

4. If you wanted to drink this hot instead, you can put the brewing cup in a bowl and fill the bowl with hot water. For this recipe, we're going to stick with the iced version.

5. Ideally you want to add the condensed milk to the cup before brewing because the boiling water actually cooks it. It does have a slight affect on the flavor. For this recipe we'll add it after since most readers probably don't know how much condensed milk they want.

6. To brew, pour a tiny bit of water in the filter just to wet the grind and to let the grind expand a bit. Also this will help rid of some small grinds that happen to make it through the filter. You can toss it out if you see any.

7. Then go ahead and fill the filter all the way and let it drip. Ideal brewing time comes to about 3 to 5 minutes so adjust the filter accordingly. Too loose and you'll just have runny brown water. Too tight and nothing will drip through. The filter will be hot, so use a fork or another utensil to adjust the filter. Place the cap on and watch the coffee drip!

8. For condensed milk, I prefer Longevity Brand - Sua Ong Tho, because of the sweet graphic. Personally, I like it a little bitter. About 1 teaspoon of condensed milk does it for me. If you like it sweeter add 2 or 3 teaspoons.

9. Pour the brew into a glass filled with ice and serve. Now make some for your coffee loving buddies!

KimPhuc survived extensive napalm burns to help today's burn survivors

The 1972 photo of a 9-year-old Vietnamese girl running through the street naked suffering from napalm burns became one of the most unforgettable symbols of the war.


Now 46 years old, Kim Phuc Phan Thai (Kim Phuc to most) spoke recently at a conference of burn survivors and burn care specialists in New York City on the physical and psychological struggle that she went through over the ensuing decades. Phuc has come far and is now a public speaker, peace activist, United Nations Goodwill Ambassador, child welfare advocate, married mother of two, and inspiration to burn injury survivors worldwide. She lives in Toronto, her home since seeking political asylum in Canada in the early 1990s.
Respect for her. My right hand burned when I was two years old (I have a scare on my right hand, sometimes I wish I were Luke Skywalker so I always could wear a glove on my right hand), so my dear visitor, believe me (or not), this post is not for SEO.

Kim Phuc Talks About the Incident of June 8, 1972

Kim Phuc said in London:
"I see the picture and the documentary (referring to a film that was made about her life in 1997). That makes me remember all the time. I saw the airplane. I saw the fire. I got burned. I was so scared and crying and running out of the fire."

Kim Phuc added later:
"Panicking under the fire I suddenly realised that my feet had not been burned. At least I could run away. If my feet wound have been burned I would have died in the fire."

Kim Phuc does not try to avoid memories. She wants to see the photograph exposed to future generations. "Let the world see how horrible wars can be", Tom Buerkle of the IHT quotes her.

Rather than returning with his eight rolls of film directly to the AP office in Saigon Nick Ut did not hesitate to load Kim Phuc with some members of her family into the AP's minibus and drive her to the provincial hospital in Cu Chi.

Nick Ut recalled in London, 28 years later, with Kim Phuc standing beside him: "When we reached there the hospital was overcrowded with war injured people. I had the impression that the emergency nurse who received us intended to hospitalise Kim Phuc, but not rush her to be treated - considering her a hopeless case and to die sooner or later. I got through to a doctor and explained who I was, what I had photographed and that Kim Phuc needs immediate help."

Kim Phuc said in London about Nick Ut:" He saved my life. He's wonderful, isn't. he? I am so grateful that he didn't only do his job, but he's a human being helping another."

Kim Phuc now calls Huynh Cong 'Nick' Ut her 'Uncle Ut'.

However, the happy ending in London was preceded by endless years while doctors fought for her life. Her chin was molded to her chest, caused by burn wounds. Her left arm was almost lost, except for the bones and scarred flesh. Seventeen operations were necessary to give Kim Phuc a life back worth living.

Today Kim says she knows no hate. "If I could talk to the pilot who dropped the bomb," she said," I would say that we can' t alter history."

Pilot and plane were part of the 518th Squadron of the South Vietnamese Airforce (VNAF) based in Bien Hoa.

Phan Thi Kim Phuc had seven brothers and sisters between the ages of 18 and 1 years old at the time of the June 8, 1972 air raid in which she was injured.

Her parents - the father Phan Thanh Tung and mother Du Ngoc Nu owned a small roadside restaurant and some land just behind the Cao Dai pagoda. The members of the family were at the time believers of the Cao Dai religion, a faith combining elements of Christianity, Buddhism and Taoism, founded in the region west of Saigon in the early 20th century.

The family had not fled when North Vietnamese troops showed up in Trang Bang. They were not aware until the very last moment that they would be in the target area of an air strike which was aimed at North Vietnamese troops but mistakenly caught unaware civilians.

At left, screaming in agony from an eye injury is her then 12-year old brother Phan Thanh Tam. A bit behind is her youngest brother Phan Thanh Phuoc , then 5 years old and not seriously injured in the raid. At right are Kim Phu's small cousins Ho Van Bo, a boy, and Ho Thi Ting, a girl.

Other pictures show Kim Phuc's aunt, Nguyen Thi Xi, carrying the nine-months old boy Phan Can Cuong and her grandmother Ly Thi Tho with the three year old Phan Van Danh - both distant relatives of Kim Phuc.

Cuong and Danh were the two fatal casualties of the raid. Danh died in Kim Phuc grandmother's arms, Cuong died ten days later from burns
